Ingredients

Seasoning: (Create ours or use your own!)
• 1 tablespoon of chili powder
• 1 teaspoon of ground cumin
• 1 teaspoon of garlic powder
• 1 teaspoon of onion powder
• 1 teaspoon of smoked paprika
• ½ teaspoon of dried oregano
• ½ teaspoon of sea salt
• ½ teaspoon of fresh ground black pepper
• ½ teaspoon ground cayenne pepper

Combine all spices in a container and set aside. (Use a lid to keep it fresh if you make it a while before cooking!)

For the Secret Sauce:
• 2 teaspoons of coriander seeds
• 2 teaspoons of cumin seeds
• 2 tablespoons of extra virgin olive oil
• 2 jalapeño peppers, seeded and diced
• 1 serrano peppers, seeded and diced
• 4 cloves of garlic minced
• 1 medium onion diced
• 12-ounces of tomato sauce
• 1 tablespoon of agave syrup
• ½ teaspoon of sea salt

For the Pickled Onions Topping:
• 1 medium red onion, very thinly sliced
• ½ cup water
• ¼ cup distilled white vinegar
• ¼ cup apple cider vinegar or additional white vinegar
• 1 ½ tablespoons maple syrup or honey
• 1 ½ teaspoons fine sea salt

Pack the onions into a heat-safe vessel.

In a small saucepan, combine the water, both vinegars, maple syrup, and salt. Bring the mixture to a simmer over medium heat.

Pour the mixture over onions and press them safely into the mixture with a fork or knife. Let the pickled onions cool to room temperature and then enjoy!

The Wagyu Ground Beef Tacos:
• 1 pound of Good Ranchers American Wagyu ground beef
• 2 tablespoons of above seasoning or your own
• ¼ cup of water
• Your choice of cheeses and toppings

Instructions

For the Secret Sauce:
1. Heat a cast iron pan or skillet to medium heat. Toast the coriander and cumin seeds while stirring until fragrant.
2. Add the olive oil and raise the heat to medium-high. Toss in the onions and peppers and sauté for about 5 minutes. Once they are gaining color and softening, add the garlic. Sauté until onions are brown.
3. Add tomato sauce, agave syrup, and salt and cook for 3-5 minutes.
4. Blend until it has a smooth consistency.
5. Set the sauce aside in a bowl until ready to serve

For the Wagyu Ground Beef Tacos: 1. Bring a large cast iron or nonstick pan to medium-high heat and add your Wagyu ground beef. Break up the meat and stir until browned and cooked through.
2. You can choose to drain most or half of the fat out of the pan. We prefer to leave half in because that wagyu marbling is what gives these tacos their distinct flavor!
3. Keep the heat going and add taco seasoning to the beef and add ¼ cup of water. Stir and add more water if necessary. Make sure the seasoning has been incorporated throughout the meat. Add more water and simmer as necessary to reach the right consistency.

All that is left to do is to put your delicious wagyu taco meat into your shells or tortillas of liking, top with everything you love - definitely the pickled onions - and then finally drizzle the secret sauce on top!
