Walters State offering Fall Culinary Kitchen Classes



Walters State Community College in Sevierville is offering some interesting culinary kitchen classes this fall, including a class on Tailgating & Grilling.

September 10, Tailgating & Grilling
The tailgate party is focused around the "tailgate" (or back) of the pick-up truck and usually involves cooking on a small grill or barbecue and adding salads, drinks, and snacks; to include dry rubs and marinades, carne asada steak sandwiches, marinated wings, bacon-wrapped jalapeno poppers, taco cheese ball, and black bean hummus.

September 17, Cheesecakes
You wil learn basic steps of mixing and baking cheesecakes. You will see how adding variety to the cheesecake and the crust changes them from ordinary to show-stopping. Several different cheesecake recipes included.

September 24, Tips, Tricks & Shortcuts
You don't need specialty gadgets for all jobs; everyday kitchen tools can be used in surprising ways. Have you ever thought of using a muffin pan upside down or a quart milk carton to make heart shape boiled eggs? Come to learn new tricks with lots of tips

October 1, Apple Fest Throw-Down!
Whether it is a new creation or an old family favorite, it's all Apple for a day. To include fried apple pies, apple dumplings, apple bread, apple crisp, and apple cider pork roast.

October 15, Oktoberfest
What about bratwurst, pork, sauerkraut, red cabbage, spaetzle or German potato salad? A traditional German meal to remember and you made it! Tecniques and varities will be discussed.

October 22, Rolls, Rolls, & More Rolls
You start with a basic soft roll recipe, but not only do you learn to mix the dough and observe the importance of resting before portioning, you will learn to make rounds, knots and even Parker house rolls. Will discuss adding variety by changing a portion of the flour or by adding herbs or even cheeses. You will learn how simple it is to make variety to impress your guests at your next dinner party.

October 29, Gingerbread Houses Part 1
Several patterns for houses of different sizes and styles will be provided for you to choose to create your own. On day one you will learn to make gingerbread, roll the dough, cut your pattern pieces, and bake the pieces. Time will be given to discuss decorating ideas and suggestions for completing the project. (You will need to supply a board of base of your house and any candies you want for decorating.)

November 5, Gingerbread Houses Part 2
Continuing after you have baked the frame for your house, the structure is "glued" together and the decorating begins. It is very important that you have a sturdy base for building the house, which also allows you to move and transport your house without causing damage or breakage. (You will need to supply a board of base of your house and any candies you want for decorating.)

November 12, Cooking for the Holidays
Capture the spirit of the holiday season by entertaining stress free. Learn to prepare dishes that are not only effortless but sure to delight guests.

November 19, Gifts for the Holidays
Cookies in a jar, spiced nuts, drink mixes, and more. You will learn how to make items, package them, and decorate containers for beautiful gifts.
